Since 2020 Romain Dercile and François Gautier  have been at the helm of Fleur de Sel, in the heart of Cossonay. One in the kitchen, the other front of house, they passionately carry forward the culinary legacy of  Carlo Crisci, an emblematic figure of Swiss gastronomy.

Chef Romain Dercile serves creative, generous cuisine deeply rooted in the region, prepared with carefully selected local produce and renewed with the seasons.

Each menu is conceived as a sincere and refined experience, combining precision, emotion and respect for the terroir.

Where is the Fleur de Sel fine dining restaurant located?

Fleur de Sel is located at Rue du Temple 10, 1304 Cossonay-Ville, in the Canton of Vaud, around 20 minutes from Lausanne and Yverdon-les-Bains and about 45 minutes from Geneva, with easy access from the motorway and Cossonay-Penthalaz station.

The house is rated 17/20 by Gault&Millau and is listed in the Michelin Guide, in recognition of its creative, seasonal fine dining.

Fleur de Sel offers creative and generous fine dining, deeply inspired by the seasons and regional produce.
Chef  Romain Dercile  works with carefully selected ingredients from local producers to create dishes that are refined, sincere and respectful of the terroir. Depending on the time of day, the house offers  Daily Lunch at lunchtime, tasting menus at dinner and a regularly changing seasonal  à la carte menu.

Yes. A complete vegetarian menu is offered alongside the tasting menus. Allergies and special dietary requirements can be accommodated when mentioned at the time of booking.
